Southern Style Potato Salad - A summer picnic classic, this easy salad is loaded with flavor and always one of the most popular dishes at any meal! * Recipe on GoodieGodmother.com

Fourth of July weekend was definitely all about potato salad at our house. My baby sister and dad were both in town visiting, and they are the family potato salad lovers, so I decided to make versions for each of them! My dad absolutely love the Spanish potato salad (ensalada Rusa), so I made one for him (recipe coming soon), but my sister and her husband prefer to keep it American classic and they like the Southern style potato salad – the kind with eggs, and a mixture of mustard and mayo in the dressing. Which turned out to be a perfect barbecue side dish, and has an unintended Texas twist! (more…)

I discovered something pretty cool the other day when I was walking around the grocery store… quick cooking farro. Normally, I’m wary of quick-cooking anything, but farro, like barley, is a wheat grain that takes a long time to cook, so the promise of farro ready to use in 10 minutes (more like 15 with getting the water to boil and all) was pretty exciting to me. I knew I was going to make it into a salad to keep with the “simple and quick” theme. I picked up a little creamy feta, and then waited something ridiculous like two weeks before putting this together. And then I made it twice in three days.  (more…)
