Creamy, crunchy cilantro lime coleslaw has just the right hint of creamy with a touch of kick. This is a great recipe to pair with barbecue or bring to a potluck!
I don’t know if it’s the Southern girl in me, or the picnic lover, or just the part of me that really likes the texture of crunchy vegetables mixed with the right amount of creamy dressing, but I cannot turn down a good slaw. And when circumstances line up where I need to bring a dish to a potluck, there are beautiful cabbages at the grocery store, and I happen to have extra cilantro and jalapenos at home, I get creative and make a cilantro lime coleslaw. I discovered something pretty cool the other day when I was walking around the grocery store… quick cooking farro. Normally, I’m wary of quick-cooking anything, but farro, like barley, is a wheat grain that takes a long time to cook, so the promise of farro ready to use in 10 minutes (more like 15 with getting the water to boil and all) was pretty exciting to me. I knew I was going to make it into a salad to keep with the “simple and quick” theme. I picked up a little creamy feta, and then waited something ridiculous like two weeks before putting this together. And then I made it twice in three days. (more…)

This past November we took our first “official” family trip to Walt Disney World. The Godfather and I have been blessed to travel there quite a bit previously as my parents are long time DVC members and we grew up just a few hours away. Our wedding was even held around the World Showcase in Epcot! November was a very special trip for us though as it was our first with Princess A. She love the parks, the rides, and this chickpea salad. She really really loved this chickpea salad from the Harambe Market in Animal Kingdom. (more…)
Something about the change in seasons makes me crave salad. I don’t know if it’s because I fear winter weight gain and so this is my subconscious attempt to balance preemptively, or because lettuce, arugula, and many of the leafy greens I like to include in my salads are actually in season when it gets cooler.
