This past November we took our first “official” family trip to Walt Disney World. The Godfather and I have been blessed to travel there quite a bit previously as my parents are long time DVC members and we grew up just a few hours away. Our wedding was even held around the World Showcase in Epcot! November was a very special trip for us though as it was our first with Princess A. She love the parks, the rides, and this chickpea salad. She really really loved this chickpea salad from the Harambe Market in Animal Kingdom. (more…)

Something about the change in seasons makes me crave salad. I don’t know if it’s because I fear winter weight gain and so this is my subconscious attempt to balance preemptively, or because lettuce, arugula, and many of the leafy greens I like to include in my salads are actually in season when it gets cooler. I fell in love with curried chicken salad when I tried it from a small Santa Barbara area sandwich chain called Panino’s. We would order office takeout from them every few weeks, and it was one of the days where I was more likely to purchase my lunch than bring from home because the sandwiches, salads, and soups were delicious! One of my favorite orders was the curried chicken salad salad, where they would basically scoop some of their curried chicken salad on a bed of lettuce and top with a balsamic vinaigrette. It was delicious, simple, and perfect to enjoy on a picnic table outside overlooking the vineyard. That office did have an amazing view. (more…)

I think I have more Brussels sprouts recipes on this blog than any other single ingredient. I know it’s definitely the most frequently featured vegetable, but I’ve always roasted it or cooked it in some way, and this time I didn’t, so it’s different enough to merit ANOTHER Brussels sprouts post. Brussels sprouts are wonderful in any season, even when you can’t bear the thought of turning on the oven. They’re versatile like that. (more…)
