Simple, fresh flavors are the best way to dress up this colorful Greek oven roasted vegetables dish.
When it comes to vegetables, I appreciate simplicity. It’s not that more complex dishes aren’t fun, but for everyday, simple is best. When the weather gets cooler outside, I like to make oven roasted vegetables because it’s easy, and roasting lends itself well to most in-season winter veggies. It’s fun to change things up occasionally though, and that’s just what this Greek oven roasted vegetables recipe does. (more…)
Somewhere between potatoes au gratin and the Hasselback potato, this ranch Hasselback potato casserole is a tasty side dish with everything you love about both dishes. Crispy potato edges and a creamy, cheesy sauce.
The NYT Food section sends me on “I must make this!” cooking tangents more often than I should admit. Like last year, when they posted a recipe for a Cheesy Hasselback Potato Casserole and, after I showed it to the Godfather, it was dinner. Not a side dish, just dinner. With an egg. Thorough enjoyment ensued and the Hasselback potato casserole replaced au gratin potatoes and Hasselback potatoes in our home. At least, for the moment, as we have neither too frequently. (more…)
Bacon Brie mashed potatoes have all the flavors of a gourmet loaded baked potato with the ease of mashed potatoes!
These are, without a doubt, the most indulgent mashed potatoes I have ever served. From time to time, I make cheesy mashed potatoes, or add a bit of bacon, but this recipe felt like a Facebook cooking video come to life. You know, those over-the-top dishes that everyone wants to try after seeing them on social media or Food Network? This is it. I’m a little surprised Guy Fieri didn’t ask if I’d share this on Diners, Drive-Ins, and Dives, except for the part where I’m not a restaurant. Minor detail. But if you’re looking for a loaded mashed potato recipe, this should definitely be a finalist. It’s so creamy, rich, yet balanced, and makes the best cold weather comfort food or rocking holiday side dish. (more…)
With less fat than a fried potato, these baked chipotle sweet potato fries pack a kick and make a delicious side dish or snack!
9 times out of 10, if you ask me to choose between French fries and dessert, I’ll pick fries. Surprise! I like baking sweets more than eating them, and my true weakness is the salty food. Especially fried, salty, starches. Nevertheless, I totally understand that fried foods aren’t an every day treat – nor would I want them to be. Instead, I find other ways to satisfy my cravings, like these fabulously seasoned baked chipotle sweet potato fries! (more…)
With a bit of crab and shrimp in each bite, this Mid-Atlantic seafood stuffing (dressing) is a delicious way to bring coastal flavors to the holiday table, or just a great dish to enjoy anytime!
I joke that food bloggers think three months in advance for holidays, and normally I wouldn’t be posting the Thanksgiving stuffing recipes in the middle of the summer, but I couldn’t resist. Also, I’m squarely blaming Paige from Where Latin Meets Lagniappe for these shenanigans. Feel free to go thank her after you try this dressing recipe, because I know you probably won’t be able to wait until Thanksgiving either. (more…)
