Ensaladilla Rusa, also called Ensalada Rusa, or just Spanish potato salad, is a favorite Spanish dish.
I made this dish for my Daddy. Today is his birthday and so it seemed fitting to share Ensaladilla Rusa on the blog. When my parents visited last summer, we had a barbecue. The visit coincided with Fourth of July, and when it’s summer (or winter, or anytime really) and the Godfather has time, we barbecue or grill. There is a difference between barbecuing and grilling, but that’s for another post. When I asked my parents about side dishes, my father requested Ensaladilla Rusa, one of his favorite childhood dishes from Spain. I’m a Daddy’s girl, and so I worked out a recipe and he approved! Mint pea couscous is the perfect side dish to welcome warmer weather!
It’s finally officially warm here, darlings. I needed spring to arrive. I needed warm weather and sunshine, and fresh produce of the green variety. The Godfather and I aren’t “live in winter” people. We’re more like “visit” winter people, and while we didn’t really have “winter” per se this year, we couldn’t leave the house too often with a new little in tow. It’s no secret we love potatoes in this house. We prepare them all different ways, and I’m always collecting new recipes to try. We also love Spanish flavors, and my husband laughs that my Spanish side shows with my love of adding paprika to almost everything. One of the most often heard questions when I’m “to taste” seasoning a savory dish is, “should I add paprika?” And yet, I don’t think I have a dish on the blog with paprika and potatoes. When it comes to vegetables, I appreciate simplicity. It’s not that more complex dishes aren’t fun, but for everyday, simple is best. When the weather gets cooler outside, I like to make oven roasted vegetables because it’s easy, and roasting lends itself well to most in-season winter veggies.
