I can’t remember the last time I left the house without a snack in my purse and didn’t think, “There might be a meltdown.” Not that I will melt down, but the eldest tiny member of my entourage might. Sometimes, I live on the edge, but mostly, I stock my bag with a few good snack options. 

Recently, I was introduced to Moon Cheese. Moon Cheese has just one ingredient, cheese, but it’s crunchy! The cheese is dehydrated, so it retains its flavor and is still a high protein, gluten-free snack, but it no longer requires refrigeration. You may have spotted bags at your local Starbucks or at select Target stores. Moon Cheese comes in three flavors: Gouda, Cheddar, or Pepper Jack. I like that the bag is resealable, making it an easy, portable snack option.

One afternoon last week, Princess #1 asked for a snack to enjoy while watching a movie. I went to make her a bit of popcorn and spied a bag of Gouda Moon Cheese on the counter near a bottle of black truffle oil. Inspiration struck, and crunchy Gouda black truffle popcorn was born. So easy, delicious, and the Moon Cheese definitely added a little something extra. She ate her entire bowl, and I was glad I made a little extra to pack for later. Since Moon Cheese doesn’t require refrigeration, I wasn’t worried about packing a “cheesy” snack.

I’ve included a “recipe” below in case you’d like to make the popcorn, but measurements are flexible. You can make the popcorn any way you wish – stove top, air popper, or my usual method, a plain brown paper bag in the microwave. Just don’t use the pre-bagged microwaveable popcorn. When it comes to ingredients in our food, less is more darlings.

Crunchy Gouda Black Truffle Popcorn

Ingredients

  • 2 tbsp popcorn kernels
  • 2 tsp black truffle oil
  • 1 ounce Moon Cheese - Gouda
  • salt

Instructions

  1. Place the popcorn kernels in a plain brown paper bag. Fold the bag shut. Microwave on high 2-3 minutes until popping slows to 3-4 seconds between pops.

  2. Remove the bag, carefully unfold and drizzle in the oil and salt. Shake. Add the Moon Cheese and shake once more to distribute cheese. Enjoy!
