Ever since we spent a few years in Georgia, I look forward to summer and peach season with a childlike glee. Fresh, juicy, peaches are the official sign of summer for me! They’re at their best when the hot weather starts, and so so refreshing. Fun fact, did you know there are over 2,000 different varieties of peaches? And they reach their seasonal peak at different times throughout the summer, so you can get perfect peaches all summer long! Which is fantastic and gives you plenty of time to enjoy all sorts of peach recipes, from cake to smoothies.

An annual “must” for us is fresh peach cobbler. You can use canned peaches, but save those for when there aren’t piles of gorgeous sweet peaches tempting you at every store and farmer’s market.

I think my favorite thing about making fresh peach cobbler is the simplicity. Layer cakes and macarons are fun, but summer is so busy, and baking dessert shouldn’t be stressful! I’ve definitely rediscovered my love of unfussy desserts this year. I’m probably going to say this every summer, honestly.

It’s part of the cyclical nature of each year. Summer is when I turn my attention to home projects, adventures with the family, and things other than hours in the kitchen. It’s just a busy time of year. Not to mention, with so many fruits in season, an easy dessert is readily available, especially when paired with some mascarpone whipped cream.

And yet, exceptions are to be made to the no oven rule, and baking must be done! Because fruit pies are a sure way to bring your favorite people to the table, and cobblers are a classic! Seriously. Melt your butter right in the baking pan, toss in your sliced peaches, a bit of easy batter, and you’re done! Dessert is served. Pick up some ice cream, and peach cobbler a la mode becomes one of the best peaches n’ cream desserts ever. Who can say no to flavorful fruit nestled in a lightly cinnamon-spiced cake and topped with a dollop of ice cream or whipped cream?

The most complicated thing about this fresh peach cobbler recipe is peeling the fresh peaches. So many websites rave about the boiled water method for peeling peaches, but it has never worked for me. I always end up with a mess of hot peaches and one more pot that needs cleaning. So I grab my trusty serrated peeler instead. I peel the skins, run a knife around the peach along the crease, and gently pull open to reveal the pit. Remove the pit, slice the halves (or cube, your choice), and done! One serrated peeler, one knife, one board, and no scalding water. This is safer for this clumsy baker!

Fresh Peach Cobbler

Yield: 10 servings
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

A classic summer dessert, perfect for fresh peaches!

Ingredients

  • 2 lbs fresh peaches (about 6 peaches)
  • 2 teaspoons lemon juice
  • 8 tablespoons butter
  • 2/3 c brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1 c self rising flour
  • 1/4 c granulated sugar
  • 1 cup liquid (milk, buttermilk, or water all work here)
  • 1/2 tsp cinnamon
  • whipped cream or ice cream for topping (optional)

Instructions

  1. Peel and slice your peaches into wedges or chunks.
  2. Preheat your oven to 400 F. Place a 9x13" pan in the oven with the stick of butter until melted.
  3. Stir the peaches into the butter and sprinkle with the lemon juice and brown sugar and 1/2 teaspoon cinnamon. Return to the oven.
  4. In a clean mixing bowl, combine the self rising flour, granulated sugar, and remaining cinnamon. Stir in your liquid.
  5. Remove the peaches from the oven and dollop the batter evenly over the peaches.
  6. Return to the oven and bake an additional 30 minutes until the dough is a light golden brown and baked through.
  7. Remove from the oven and allow to cool on a rack at least 10 minutes before serving. Serve warm topped with ice cream or room temperature with whipped cream or alone. Enjoy!
