Cajeta, a goat’s milk version of dulce de leche, is a delicious caramel for desserts. You can make dulce de leche from scratch using either goat’s milk, or cow’s milk.
I rediscovered goat’s milk this summer, darlings. We can thank brunch at a local diner, actually. The Godfather and I were waiting in line for our table, and a poster on the wall had an ad for the restaurant’s goat cheese cheesecake. I told the Godfather I was going to make some and add caramel. He rolled his eyes a little since he only likes goat cheese in warm savory dishes, but when I get a certain look, he knows I’m going to make what I want anyway. I haven’t made the cheesecake. In case y’all haven’t noticed, it’s about a million degrees outside and just getting hotter. But the siren song of goat-based dairy called to me, and I ordered some goat’s milk from my milk farmer. Darlings, these cupcakes are ridiculous good and became an instant favorite. Actually, I can’t even take credit for the idea. I first made caramel stuffed s’mores cupcakes for a baby shower order with my bakery. The hostess was trying to choose cupcakes she thought mama-to-be would enjoy and asked if we could combine s’mores flavors and caramel. I shared one of the extras with the Godfather and it was love at first bite! Y’all know I love caramel, and these caramel stuffed s’mores cupcakes will become a favorite of yours too. (more…)
A rich caramel swirl rippled perfectly through pillowy coffee flavored marshmallows. These caramel latte marshmallows are coffee-lover gourmet marshmallow perfection, and perfect to make at home.
We have 4 (maybe 5?) different kinds of coffee maker in our house – not one a “traditional” coffee pot or pod coffee maker. Stove top espresso, French press, pour over, travel press mugs, all live in our small “coffee and tea” cupboard nestled between the microwave and refrigerator. A grinder and a few other accessories in there too. We do not play when it comes to coffee in this house. (more…)

We’re in the middle of putting a lot of “finishing touches” in our home. Partially it’s because – 10+ years into marriage – we are slowly phasing out the hand-me-down furniture, and in part because many things just didn’t fit when we move into our current house. Darlings, we still had boxes of college textbooks… from our undergraduate years! Kudos to you if you can tell me when I’ll ever use differential equations in my current line of work. This fabulous unique caramel corn recipe was inspired by my favorite Girl Scout Cookie, the Samoas (or Caramel D’Lites). The last batch of samoas caramel corn I made disappeared in minutes!
Ever since I whipped up a batch of chai tea caramel corn and realized how easy it was to make caramel corn at home, I’ve had so much fun experimenting with recipes! Last Christmas, I shipped care packages to family with snacks, and included my s’mores caramel corn and this Samoas caramel corn. The recipe didn’t go up last year because the caramel corn I saved for pictures disappeared too quickly. I had to make this recipe at least 3 times to get pictures, everyone loves it! (more…)
