Sit down my darlings and let me tell you a story of how these caramel hot chocolate brownies came to be. Circumstances fell into place starting in September when we had a cool evening… by cool I mean under 70 F. Cool evenings make me think of hot chocolate with my favorite people, and so on three *separate* occasions I ended up picking up a box of hot cocoa mix at the store “just in case” we had an evening where I wanted hot chocolate, but didn’t have the chocolate on hand to make hot chocolate from scratch. This is a rational precaution in this house, until I realized I had three unopened containers of hot chocolate in the pantry and we maybe go through one in a year at most.

Everyone loves homemade caramel sauce. This isn’t a broad generalization, it’s just fact. Homemade caramel sauce is easy to make, and you likely have the ingredients on hand, so you can basically whip up a batch whenever, but you have to store the extra in the refrigerator, where it becomes hard. Then, when you want caramel you have to wait, and one should never have to wait for caramel. Over the years I’ve played with a few recipes and finally found my happy ratio of ingredients for a stay soft caramel sauce. The best part is, this caramel sauce stays soft without corn syrup, which most people don’t have in their pantry at any given time. You can probably make this caramel right now, but I’d recommend reading the post first, especially if you’re a caramel-making newbie. 😉

For some reason, I have been hoarding coconut ingredients recently and I have no idea why. I have two and a half bags of coconut flour, have gone through two bags of unsweetened coconut flakes in less than a month with no macaroons in sight, and have a couple assorted cans of coconut milk in the pantry. I used a little light coconut milk in my coffee during my Whole30, but all of this has entered the house post-challenge, so clearly that’s not the reason.

Some days, you need to bake a chocolate cake and cover it with ganache. But you can’t just make any chocolate cake, it should be a peanut butter chocolate cake because you haven’t had a peanut butter cup in ages and really isn’t it about time, but then you remember you haven’t made caramel in at least a week or so and you need some of that too, and a peek into the spice pantry has you staring at sea salt so you basically end up with a giant run-on sentence and this cake.
