My mom was a busy mother of 3, and sometimes we had fast food for dinner, because life happens and that’s okay. One of my favorite treats though, was the Taco Bell Mexican pizzas because of the novelty of the dish. Who doesn’t love Mexican food and pizza? Now that I’m an adult and find my schedule also full, I completely understand why my mother turned to an easy dinner sometimes. Since I’m a food blogger and work with food constantly though, I feel guilty if I don’t try to recreate easy at home (food blogger mom guilt). If regions of the United States were to be described in dips, this one would be the mid-Atlantic. Cheesy, with a mild kick, crab seasoning, and of course, a generous serving of crab baked right in, this crab jalapeno popper dip has football party written all over it. I’m really bad at following professional football if we’re going to be honest, but I do love a good dip at a halftime show party (that’s why you watch the big games too). (more…)
Everyone has that one food that they imagine they could never give up, and mine is cheese. I love cheese, real cheese, and full fat creamy delicious cheese is one of my favorite guilty food pleasures. If I absolutely had to choose, I’d give up chocolate before cheese, in a heartbeat. I love cheese. And when it’s warm and melty and topped with a tangy fresh cranberry balsamic compote, I might not even share if you aren’t immediate family. They didn’t think I should share either.
So… Cinco de Mayo is coming up and since I actually have this recipe ready to go, let’s all pretend I’m sharing it to be festive and not because I was planning to share it anyway since this is AWESOME, okay? I mean really, how much more impressive does it get to be able to say, “Oh, this delicious cheese? I made it”? And then your friends are like “EHRMAGAHRD, that’s AHHHMAZING!” and you just hope they never come across this post so they don’t find out your secret.
Do you know why people love broccoli cheese soup? Because it’s cheesy and thick and comforting. Do you know what most of the recipes I’ve tried online aren’t? Cheesy and thick, so they can’t be comforting. I have tried *many* recipes, copycat recipes, big name blogger recipes, major food site recipes, little food blogger recipes, and couldn’t find “the one”. I wanted that recipe that was going to give me the broccoli CHEESE soup I was looking for, but you know what they say… if you want something done right, you have to do it yourself. So I did, and now I’m sharing with you so you don’t have to be disappointed by thin broccoli cheese soup recipes either. (more…)
