I keep one and a half lists of recipe ideas at any given time. One and a half at the moment, but I’m slowly merging the two for simplicity’s sake. “Merging” the lists mainly means that I’m working through what’s left on one so I can go paperless for my recipe idea tracking. One of the items on my little paper list though, is a good gluten free banana bread. The more I thought about it though, the more I decided I had to make a paleo banana bread and not just a gluten free banana bread. Pomegranates are a gorgeous winter fruit to enjoy in all sorts of recipes! One of my favorite easy breakfasts or snacks is this pomegranate vanilla chia seed pudding parfait.
I’ve always loved pomegranates. As a kid, I thought it was so much fun to open the fruit and pick out the seeds one by one. I use more efficient peeling methods now, but a bowl of colorful pomegranate seeds still makes me happy. Enjoying fruits and vegetables in their natural state (thanks mom!), I usually just enjoy fresh as a snack with some nuts. Pomegranate seeds are also great over oatmeal or yogurt. Pork was the centerpiece of many family meals growing up, whether it was a whole hog for Christmas Eve dinner (known as Noche Buena), or a pork shoulder for Easter and most holidays. Strange as it sounds, you may thank a protein smoothie for this peanut butter pumpkin blondies recipe. I was on a pumpkin mocha protein smoothie kick for about a week, and the only can of pumpkin I could find in my cabinet was one of those monster cans that has enough puree for 2 pies. Given that I don’t drink a protein smoothie every day, and that each smoothie only requires a bit of pumpkin, I had quite a bit leftover. Which could have become something healthy, but why? Many years ago, I read about jicama on a low carb recipe makeover board. When I spied it in the grocery store, I picked one up and used it as a substitute for potatoes for breakfast one morning. We loved it! Jicama isn’t an identical substitute for potatoes, it is slightly sweeter, but the flavor and texture are close enough that we enjoy it. At only 49 calories per cup and 6 grams of fiber though, jicama is a great substitute for white potatoes! One of our current favorite recipes is this jicama breakfast skillet. (more…)
