Darlings, it’s time for another episode of “random Godmother food confessions”. When it comes to strawberries mixed with other flavors, I’ll take strawberries with cream any day over a chocolate covered strawberry. This makes me a minority I’m sure, especially since I do like both strawberries and chocolate and really love dipping strawberries in chocolate. For some reason, this has always concerned me. Darlings, these cupcakes are ridiculous good and became an instant favorite. Actually, I can’t even take credit for the idea. I first made caramel stuffed s’mores cupcakes for a baby shower order with my bakery. The hostess was trying to choose cupcakes she thought mama-to-be would enjoy and asked if we could combine s’mores flavors and caramel. I shared one of the extras with the Godfather and it was love at first bite! Y’all know I love caramel, and these caramel stuffed s’mores cupcakes will become a favorite of yours too. (more…)

I’m a big fan of melting chocolate right into cake batter. I like my chocolate cake to taste distinctively of chocolate. The only problem with that is that sometimes, like when baking cupcakes, it doesn’t really result in a domed cupcake. I also like domed cupcakes. So once I realized people were using my perfect chocolate cake recipe as cupcakes and getting flat tops, I set about modifying the recipe to create chocolaty chocolate cupcakes. Let’s take a step back in time, darlings, all the way back to high school (for me). High school was a fun experience. I had a wonderful group of friends, played sports, was in band, all the typical “high school” things. The only thing I didn’t do was date, which now that I look back was a good thing. So when it came time to go to prom, I went with my girlfriends, and my “date” was my friend Sean whom I’ve known since 2nd grade. (more…)

This is another recipe inspired by my little patio garden! So, I have a mint plant I have kept alive for 2 years now, even through winter. It is a survivor, along with my chives. BUT, it’s been growing quite well this summer and when the Godfather sees it, he says, “I should make mojitos“. But that hasn’t happened much this summer. He did make me a fabulous sauce I’ll be sharing later though. The point is, the plant inspires us to create, and one day after the Godfather mused about mojitos (before going to work), I decided mojito cupcakes sounded more fun.
