Have you ever had a dish so good at a restaurant you had to go back, even if it was out of your way, just to eat it again? This is what happened with us and this White Russian Pecan Pie. Actually, it wasn’t just the pie, we had to go back for all the amazing food. Last year, the Godfather and I stopped by Julia Belle’s Restaurant at the Pee Dee Farmer’s Market in Florence, South Carolina. It’s a tiny little place with some of the absolute tastiest food we’ve enjoyed on the road. So good, we knew it was a stop on the way home before we even started our vacation. Many years ago, I read about jicama on a low carb recipe makeover board. When I spied it in the grocery store, I picked one up and used it as a substitute for potatoes for breakfast one morning. We loved it! Jicama isn’t an identical substitute for potatoes, it is slightly sweeter, but the flavor and texture are close enough that we enjoy it. At only 49 calories per cup and 6 grams of fiber though, jicama is a great substitute for white potatoes! One of our current favorite recipes is this jicama breakfast skillet. (more…)
My latest easy breakfast love, a chocolate cherry smoothie bowl! I love how adding toppings is a little bit art project, a little bit playing with your food, and totally acceptable!
Why has it taken so long for me to get into this smoothie bowl thing? I know you’ve seen them too, beautifully styled and posted on Instagram around breakfast time, and you’ve thought “That is so beautiful. Why am I still drinking my smoothies with a straw? What am I doing with my life?” Or something like that. No offense to smoothies with a straw, we love those too around here, but a smoothie bowl is like a weekend brunch smoothie, or a way to feel extra fancy at your desk since smoothies are technically acceptable to have at your desk at work in a cereal is not. Fresh turmeric is probably one of the trendiest ingredients you haven’t heard of, but you should know about. It’s often used in savory dishes, and it is a natural anti-inflammatory. Purported to have health benefits acting as treatment or prevention for all sorts of things because it contains curcumin, I suppose it falls under the “super food” category, but there isn’t solid scientific evidence yet for most of the benefits. It is still really good for you, and it tastes amazing, especially when blended into this bright fresh turmeric smoothie. (more…)
This past November we took our first “official” family trip to Walt Disney World. The Godfather and I have been blessed to travel there quite a bit previously as my parents are long time DVC members and we grew up just a few hours away. Our wedding was even held around the World Showcase in Epcot! November was a very special trip for us though as it was our first with Princess A. She love the parks, the rides, and this chickpea salad. She really really loved this chickpea salad from the Harambe Market in Animal Kingdom. (more…)
