I discovered something pretty cool the other day when I was walking around the grocery store… quick cooking farro. Normally, I’m wary of quick-cooking anything, but farro, like barley, is a wheat grain that takes a long time to cook, so the promise of farro ready to use in 10 minutes (more like 15 with getting the water to boil and all) was pretty exciting to me. I knew I was going to make it into a salad to keep with the “simple and quick” theme. I picked up a little creamy feta, and then waited something ridiculous like two weeks before putting this together. And then I made it twice in three days. (more…)
Basil and almost anything is one of my favorite flavor combinations ever. Ever. It’s just such a versatile ingredient, and one of the plants I always try to cultivate in my garden. I’ve had only minor success. But spring is coming soon, and as the eternal optimist, I have renewed hope for this year’s plant. If regions of the United States were to be described in dips, this one would be the mid-Atlantic. Cheesy, with a mild kick, crab seasoning, and of course, a generous serving of crab baked right in, this crab jalapeno popper dip has football party written all over it. I’m really bad at following professional football if we’re going to be honest, but I do love a good dip at a halftime show party (that’s why you watch the big games too). (more…)
You know that feeling when you need an appetizer dish for a potluck, you have less than two hours until you need to be there, you aren’t ready yet so a trip to the store is out of the question, and you don’t want to buy something because of course you signed up to bring something hot and not chips and salsa? That’s how this recipe came to exist in our lives about seven years ago, because I am the perpetual over-committer. But we have really juicy, delicious meatballs that taste amazing, and are just a little different than your “usual” meatball recipe, so maybe in this situation a little over-commitment turned out for the best. Let’s all make a promise not to buy pizza dough anymore, okay? It’s just too easy to make at home, and you can even make it in advance and freeze it for later. Just save the $4 or whatever they charge for the pre-made stuff and treat yourself to a latte or good chocolate bar or something. (more…)
