When it comes to vegetables, I appreciate simplicity. It’s not that more complex dishes aren’t fun, but for everyday, simple is best. When the weather gets cooler outside, I like to make oven roasted vegetables because it’s easy, and roasting lends itself well to most in-season winter veggies. The NYT Food section sends me on “I must make this!” cooking tangents more often than I should admit. Like last year, when they posted a recipe for a Cheesy Hasselback Potato Casserole and, after I showed it to the Godfather, it was dinner. Not a side dish, just dinner. With an egg. Thorough enjoyment ensued and the Hasselback potato casserole replaced au gratin potatoes and Hasselback potatoes in our home. At least, for the moment, as we have neither too frequently. (more…)

These are, without a doubt, the most indulgent mashed potatoes I have ever served. From time to time, I make cheesy mashed potatoes, or add a bit of bacon, but this recipe felt like a Facebook cooking video come to life. You know, those over-the-top dishes that everyone wants to try after seeing them on social media or Food Network? This is it. I’m a little surprised Guy Fieri didn’t ask if I’d share this on Diners, Drive-Ins, and Dives, except for the part where I’m not a restaurant. Minor detail. But if you’re looking for a loaded mashed potato recipe, this should definitely be a finalist. It’s so creamy, rich, yet balanced, and makes the best cold weather comfort food or rocking holiday side dish.  (more…)

This past November we took our first “official” family trip to Walt Disney World. The Godfather and I have been blessed to travel there quite a bit previously as my parents are long time DVC members and we grew up just a few hours away. Our wedding was even held around the World Showcase in Epcot! November was a very special trip for us though as it was our first with Princess A.
