I can’t believe I hadn’t cooked with fresh turmeric until this year! It’s embarrassing really, and now that I’ve started cooking with fresh turmeric, I don’t think I can ever return to using just the jarred stuff (although I still use it too). I had heard about fresh turmeric and how great it is for you, but the local grocery stores didn’t really carry it regularly, and I wasn’t sure how to use it, so I just never really looked for any. That is, until I came across a recipe on Whitbit’s Kitchen explaining how to make turmeric powder. So the next time I headed to the local international store, I found fresh turmeric on sale (score!), and purchased some. In the process of selecting my turmeric, I started chatting with the lovely woman standing next to me also shopping for turmeric and she asked me if I’d ever made turmeric pickle. I said no, and she told me it was her favorite way to enjoy fresh turmeric. The way her face just lit up when she shared a rough outline of how to make the dish had me purchasing extra just to try it! I have yet to try either making the powder or the curry…  (more…)

I keep my potatoes and onions in a teacup shaped wire basket on the counter. The garlic sits in the saucer section. It’s rather cute, until we have moments when I don’t realize I have three white potatoes sitting under a small mountain of onions and I buy three more potatoes, and then I don’t know what to do with the original three. Maybe it was more than three, I’m not really sure. I just know that I ended up with a lot of potatoes, which probably wouldn’t be a problem for most people, but it was very concerning for me at the time, I’m not sure why. (more…)

Cuban Sweet Plantains (Maduros)

You'd never guess these Cuban Sweet Plantains, also called "maduros", have no added sugar! A popular and easy to make side dish with just two ingredients.

As I prepared this dish, killing time by playing Candy Crush (as I do), I had a revelation that not only makes me laugh even now, but immediately conjures up the image of my father-in-law handing out food saying “Esto no engorda” (This isn’t fattening). The last time this happened was this past Christmas when he was passing around homemade chicharron (crispy pork rinds) he made on the grill while he was preparing the Noche Buena (Christmas Eve) pig. The funny thing is, as rich as the crispy cracklings were, he was right.

But now, I have another Cuban recipe to add to that category, one that even he may not have realized is actually completely acceptable for Whole30 and those who follow the paleo and primal diets. It’s amazing how easy it is to find healthy recipes when the emphasis is simply on whole foods.  (more…)
