I love dessert, clearly, but as a sometimes distance runner and part time gym rat, I need balance. One of the easiest ways for me to fuel wisely is to plan balanced snacks, like this frozen trail mix bark. It’s still a dessert, and feels like a treat, but the protein from the Greek yogurt and all the good stuff in Power Up Snacks makes it a great option anytime. I’ve even snagged a bit as post-workout fuel!
I had a chance to meet the founder of Gourmet Nut, the company that makes the fabulous Power Up Snacks mixes through the Mom Blog Tour in May. The company’s commitment to quality is abundantly clear. Did you know they only produce their mixes when a store places an order? That way, when we go to the store and buy the product, we’re getting something fresh. You can tell because the nuts are still crunchy when you open the bag. Yum.
The mixes come in quite a few varieties, so there’s something for everyone, and I like the convenient sizes. Smaller snack size options great for stashing in your desk or taking on a hike, lunchbox multipacks for back to school, and bigger bags for making frozen trail mix bark. 😉
I make my bark using a silicone baking mat because it’s easy to remove the frozen bark once it’s set. You may also use parchment paper if you’d like. Any variety of Greek yogurt or thicker yogurt will work, but we are partial to vanilla or honey so the flavors of the mix are featured. Simply spread the yogurt on your baking sheet, top with your favorite Power Up Snacks nut mix variety, freeze, then break into pieces and store frozen in an airtight container for a refreshing, wholesome treat.

The fact that it's frozen helps slow you down a bit haha. But it was definitely a favorite snack this summer.
