Are you ready for Chinese New Year? It’s in just a few weeks and I can’t wait to check out some of the local celebrations to see the colors, dancing, and – of course – eat the food! Traditional Chinese food has so much variety and so many complex and beautiful flavors, and the Godfather and I love to try new foods whenever we can. I’m actually learning a lot about Chinese New Year traditions from my friend and fabulously talented neighbor Melissa Lew, who inspired this Rose Ginger Steamed Sponge Cake. One day, we were chatting about her 2016 Chinese New Year jewelry line, and she challenged me to make a recipe to match! This is my perfect red velvet cake recipe. It’s the best red velvet cake I’ve tried, and it’s most definitely *not* chocolate cake with red food coloring, because that, my darlings, is *not* red velvet cake contrary to what I have heard/seen in my life outside the South. Bless. The mark of a really good red velvet cake is a slight tang from vinegar and buttermilk, just the right hint of chocolate, and an incredibly moist, but not super dense, crumb. This recipe is all of that, and I’ve used it for years as both a layer cake and cupcake recipe with incredible results each and every bake.  (more…)

For a period of time in my childhood, my father would travel to the Caribbean islands periodically for work. He didn’t travel often, but he usually brought something back for us girls when he did. One of his trips took him to the island where they manufacture the Tortuga Rum Cakes sold in stores and online, so he brought one back to try even though my parents don’t drink. I think I was maybe 8 years old at the time, and I was smitten with the bold flavors of the cake! I had never had anything like it, but I love well spiced food, so this bold dessert was such an exciting novelty. (more…)
