I love summer festivities. And by “festivities” I mean any casual get together, and all the birthdays. Because both the USA and I celebrate a birthday in the summer. We respect each others’ space and have separate months. It allows for better parties that way, and more reasons to bake fun desserts!

Bake may not be quite the right term though. I can’t think of many people who want to turn on the oven for long stretches when it’s hot outside. In case you’re wondering, Alabama reaches a temperature approximately 1/4 that of the surface of the sun each summer. For my literal darlings, I’m taking significant creative license here, but it does get hot. Hot enough that even I think twice before turning on my oven, and try to find fun no bake recipes to make instead.

Rice Krispie treats are one of my favorite no bake desserts for purely nostalgic reasons. It’s the one “from scratch” dessert my mom would make with my sisters and I, so fond memories are attached. Also, anything involving cereal and marshmallows is always a hit. It doesn’t matter if you’re 4 or 84, crispy rice treats are a classic dessert.

So why don’t we have a little red, white, and blue fun?

What’s one of the top three best parts about big summer bashes? Fireworks! People and food first, of course. 😉 So I decided to take a little inspiration from pyrotechnics and make these rice treats seasonally fabulous by adding some appropriately colored pop rocks candy! In addition to adding decoration, the candy adds a little “pop” with each bite. Just know if you add the rocks too far in advance, some of the fizz will disappear. They’ll still look pretty though.

I put these Fourth of July rice krispie treats on a stick for more practical reasons. At least that’s what i’m claiming and not “I needed a reason to buy the cakesicle mold!” … also true. The practical reason is that marshmallow treats can be a little sticky, so putting the treats on a stick helps lessen the mess. I also love how you can easily individually wrap them now for unique edible party favors. It’s scientific fact (sort of) that food on a stick tastes better!

The pop molds are a very soft silicone. All you have to do is firmly press enough of the slightly warm rice treat mixture into each mold and then pop it right out! They’re very easy to use and I love the kind of retro look.

If you opt not to purchase a mold, you can still make pops! Just cut the treats into rectangles once they’re set. Dip your sticks in chocolate before inserting and you’re good to go! Drizzle with your candy melts, top with Pop Rocks, and you have one “sparkler” of a no bake patriotic dessert!

Fourth of July Rice Krispie Treats

Yield: about 2 dozen
Prep Time: 25 minutes
Cook Time: 5 minutes
Total Time: 30 minutes

Add a little pop to your dessert table with these Fourth of July Rice Krispie Treats! These popsicle shaped crispy rice treats are a perfect no bake patriotic dessert.


  • 3 tablespoons butter
  • 10 ounces marshmallows
  • 6 cups puffed rice cereal
  • 1 bag blue candy coating
  • 2-3 packets of Pop Rocks candy
  • paper straws cut into thirds or short lollipop sticks


  1. Melt the butter in a large stock pot over medium low heat. Once the butter has melted, add the marshmallows and stir until melted. Remove from heat.
  2. Pour in the cereal and stir until combined. If using the popsicle molds, lightly butter or spray your hands and the molds with nonstick spray and press about 3-4 tablespoons of rice treat mixture into each mold. Apply firm pressure to ensure shape, then remove from mold and set aside. Continue until all treat mixture has been shaped into popsicle form. This makes about 2 dozen.
  3. Melt your candy coating in the microwave at 50 percent power for 1 minute. Allow to sit about 30 seconds and then stir. Add additional 15 second intervals as needed until mixture is smooth. 
  4. Dip the tip of your cut paper straw or stick into the candy coating and then insert into the bottom of a pop treat. Do so for all treats.
  5. If your candy melts start to set up, microwave a few seconds until smooth again. Place in a piping bag or freezer weight plastic baggie, and snip the corner. Drizzle candy coating over treat pops and top immedieately with popping candy. Do not open the popping candy until you are ready to top if you live in a humid climate or it will clump! 
  6. Enjoy! Treats can be made up to a day in advance, but don't top with popping candy until just before serving for the most "pop"!
