I’d like to start off by saying how much I love the word soiree. Expect to see it slightly overused as the holidays approach and I delve into serious entertaining mode, even if it’s just entertaining small groups. Tip: Chicken salad is great for entertaining when spread on small baguette rounds or put in toasted phyllo cups. Fourth of July weekend was definitely all about potato salad at our house. My baby sister and dad were both in town visiting, and they are the family potato salad lovers, so I decided to make versions for each of them! My dad absolutely love the Spanish potato salad (ensalada Rusa), so I made one for him (recipe coming soon), but my sister and her husband prefer to keep it American classic and they like the Southern style potato salad – the kind with eggs, and a mixture of mustard and mayo in the dressing. Ya’ll know I love (love) my complicated and detailed desserts. I love baking breads, making pastry, decorating cakes, etc… but in the summer, I ease up a bit. Maybe it’s because the weather is nicer so the Godfather is at the grill more often, or maybe because we spend more time outside enjoying the warmer weather, but I’m always on the lookout for simpler desserts. I really wanted to make a fireworks inspired dessert for 4th of July this year, and I had grand plans regarding cakes with hand painted details, or sugar cookies, cupcakes… something that required me turning on my oven and time that never actually materialized. Instead, I found myself wandering the aisles of my local craft store when I spotted some blue and red edible glitter sprinkles, and the idea for a “fireworks” bark was born! (more…)
My mom was a busy mother of 3, and sometimes we had fast food for dinner, because life happens and that’s okay. One of my favorite treats though, was the Taco Bell Mexican pizzas because of the novelty of the dish. Who doesn’t love Mexican food and pizza? Now that I’m an adult and find my schedule also full, I completely understand why my mother turned to an easy dinner sometimes. Since I’m a food blogger and work with food constantly though, I feel guilty if I don’t try to recreate easy at home (food blogger mom guilt). So I got to work, and with a few shortcuts, made easy individually-sized gluten free hash brown crust Mexican pizzas everyone loved in no time! (more…)
