I feel like summer is just starting… right as my e-mail inbox is assaulted with fall and all things pumpkin spice. I’m not ready to let go of summer just yet, even though I have already marked my calendar with the openings of the local farm fall festivals. That doesn’t happen until mid-September though, so let’s just enjoy the last few weeks of summer, shall we? I’ll start by making us a Strawberry Capistrano.
The Strawberry Capistrano is my take on a San Juan Capistrano, a drink made with grapefruit juice, coconut milk, and lime juice. We had a particularly beautiful and sweet batch of strawberries from the market, and I felt called to make something with them, but we’d eaten too many! I didn’t have enough for something like my fresh strawberry cake. They were delicious, so I wasn’t that sad, tbh.
There was no ice cream for milkshakes, and I’m trying to focus a bit more on wholesome foods right now anyway because baby weight and balance. So making a “healthy” milkshake seemed like a good idea. And isn’t this drink super pretty? I love how the ruby red berries blended with coconut milk turn into this gorgeous mottled pink. A tray of these at a barbecue or even served in smaller glasses as a post-meal palate cleanser would be so perfect.
Depending on the sweetness of your berries, you may find you need to add a little sweetener to the drink. My daughter liked hers a little sweeter, so I added some honey. Maple syrup would be a good option too. Unrefined sugar is still sugar, but it made me feel a little more virtuous. 😉 I hope you enjoy this recipe!
Strawberry Capistrano
The Strawberry Capistrano is refreshing, non-alcoholic, and even dairy-free and refined sugar free! It's an easy warm-weather drink.
Ingredients
- 6 strawberries, stems removed
- 2 ounces coconut milk
- 2 tbsp lime juice, juice of one lime
- honey or maple syrup to taste
- extra strawberries and lime wedges for garnish
Instructions
- In a blender, combine the first 3 ingredients and blend.
- Add sweetener if desired, then pour into two glasses and garnish with extra strawberries and a lime wedge. Enjoy!
